CHICKEN ENCHILADAS
1 chicken (2-three lb.) cooked & boned1 med. onion, chopped1 can cream of mushroom soup1 can cream of chicken soup1 cup chicken broth1 minor can chopped mild green chilies1 pkg. corn tortillas (twelve)1 lb. extensive horn cheese, grated2-three tbsp. oil
Brown chopped onion in oleo. Include soups, chicken broth and green chilies. Defeat until such time as smooth. Include chopped chicken to sauce. Warmth just to boiling. Fill each tortilla with sauce and spot in good sized casserole dish. The best with grated cheese. Bake at 350F degrees for twenty-thirty minutes or until such time as bubbly. Can be prepared the night time previous to and cooked previous to serving the future day. Serves ten-twelve.
CHICKEN ENCHILADA CASSEROLE
1 can boned chicken or three chicken breast (cooked)1 can mushroom soup1/2 can chopped green chilies1/4 lb. Cheddar cheese, grated1/4 lb. longhorn cheese, grated1 minor onion, chopped1 can enchilada sauce1 pkg. tortillas
Lightly brown chopped onion in oil or margarine. Include chilies, enchilada sauce, soup and chicken. Blend and warmth. Place in a greased casserole piece of tortillas, then pour a minor amount of chicken mixture more than them. Address with grated cheese. Make 2nd and third layers in same manner, with last layer the chicken mixture and topped with cheese. Bake at 350 degrees for forty five minutes. Serves 4.
TOM'S CHICKEN ENCHILADAS
twelve corn tortillasSalad oil
Cream Cheese Filling 2/three cup whipping cream2 cup shredded Jack cheese2 good sized onions2 tbsp butter2 cups diced cooked chicken or turkey1/2 cup sweet red peppers or pimento2 minor (three oz.) pkg. cream cheese
Fry tortillas. Drain on paper towels. Cook onions in butter until such time as limp. Blend onions, chicken, pimento and cream cheese. Blend lightly, salt to flavor. Spoon 1/three cup filling into tortillas, roll and spot seam side down in nine x 13 inch baking dish side by side. Moisten tops of tortillas with whipping cream. Sprinkle with cheese. Bake uncovered in 375F diploma oven twenty minutes to warmth by way of. Could serve with lime wedges to squeeze on each serving. Fairly mild taste.
