* four full chicken breasts, slice in half * one/four c. oil * three/four c. onion, chopped * one clove garlic, minced * 2 tbsp. cornstarch * one/2 c. dry white wine * one lg. can full tomatoes & liquid * one one/2 tsp. salt * one bay leaf * one/2 tsp. marjoram leaves * one/three tsp. pepper * one/three tsp. crushed thyme leaves * four med. zucchini (sliced one/2" thick) * one lb. fresh mushrooms
INSTRUCTIONSSeason chicken breasts with salt and pepper to taste. Heat oil in huge skillet. Brown chicken on equally sides. Cover and cook on small heat for fifteen-20 minutes. Take out chicken to huge baking dish. Pour off all but 2 tablespoons drippings. To drippings add onion and garlic.Saute right until tender.Incorporate cornstarch with one/four cup of wine. Stir into skillet. Add tomatoes and liquid. Cook and stir right until thick, about one-2 minutes. Stir in salt, bay leaf, pepper, thyme and crushed marjoram. Addzucchini. Provide to a boil. Cover and simmer three minutes. Pour above chicken. Cover and bake at 350 degrees for 20 minutes.Meanwhile, rinse, pat dry and slice mushrooms. Add mushrooms andremaining wine to casserole. Baste with scorching liquid, go over and bake right until chicken is fork tender, about 20 minutes. Juice might probably be thickened if you would like. Serve with rice or noodles (most well-liked).
