INSTRUCTIONSSeason chicken breasts with salt and pepper to flavor. Heat oil in good sized skillet. Brown chicken on the two sides. Cover and cook on decreased warmth for 15-20 minutes. Clear away chicken to good sized baking dish. Pour off all but two tablespoons drippings. To drippings add onion and garlic.Saute until tender.Incorporate cornstarch with one/four cup of wine. Stir into skillet. Include tomatoes and liquid. Cook and stir until thick, about one-two minutes. Stir in salt, bay leaf, pepper, thyme and crushed marjoram. Addzucchini. Deliver to a boil. Cover and simmer three minutes. Pour above chicken. Cover and bake at 350 degrees for 20 minutes.Meanwhile, rinse, pat dry and slice mushrooms. Include mushrooms andremaining wine to casserole. Baste with hot liquid, go over and bake until chicken is fork tender, about 20 minutes. Juice may be thickened if you want. Serve with rice or noodles (favorite).
